Reality: Lime Quinoa Breakfast Bowl is the ideal out of the box breakfast
Reality: You will enjoy this breakfast and want more of it every day. After having this breakfast, you will feel like cladding in Birkenstocks with socks on and walk out because you are cool like that.
What you need to prepare quinoa ?
Fresh almond milk
Pecans that have been nicely chopped
2 glasses of water
A glass of dry quinoa
1- Put the water and the quinoa in a pan. Heat until boiling point.
2- Reduce the heat to medium-low and let the mixture simmer until quinoa has been absorbed by the water. At this point the quinoa appears woolly. This should take around 20 minutes of simmering
3- Heat a cast iron skillet for few minutes. Use medium low heat for this. This will be used to toast the coconut.
Make sure you have either finely chopped or grated coconut which you will uniformly add in the pan.
4- Still using medium low heat, let it cook until the coconut is brown. Make sure you stir every few minutes. This should take around 5 minutes. Transfer the brown coconut into a bowl.
5- Add the almond milk, the maple syrup, a little bit of quinoa, banana chops, and the toasted coconut. Finally squeeze some lime on it.
You can enjoy this hippie breakfast now as it is or opt to mix everything together
