Mexican Hot Chocolate Energy Bites
1 cup walnuts
1/4 cup pumpkin seeds
1 tbsp sesame seeds
6 Medjool dates (pitted)
1 tsp coconut oil or ghee
3 tbsp cocoa powder
1 tsp cinnamon
1 tsp ginger
1/2 tsp vanilla powder
Pinch of black pepper, paprika, cayenne
2 tsp maple syrup
Preparations for 20 servings
1. Place walnut, pumpkin seeds and sesame seeds in a bowl. Blend these ingredients together until the combination becomes a nut butter paste. Once the paste has been formed, add all other ingredients and mix until they are combined well.
2. Scoop out mixture in small sections, form into at least 20 small balls, and then roll to finish. Finished product should be topped with cayenne and cinnamon (optional). Energy bites will keep 4 to 5 days at room temperature.
